The beauty of making brunch the center of your Easter celebration is that your menu can take on so many variations. Depending on the time of day, you have the option to plant in firmly in breakfast territory with scones and breakfast pastries, and a hearty egg casserole, mixed with cubes of ham if you’re an Easter purist. Or perhaps a large glazed ham or roasted leg of lamb will be at the center of your table, surrounded by a mix of sides that straddle both breakfast and lunch. Or maybe your Easter brunch style is to go all in, with a little bit of everything. No matter what you’re serving up, don’t forget to slide an appetizer or two into the mix. A light bite is welcome before a late brunch, so let’s talk hors d’oeuvres.

You can never go wrong with deviled eggs on Easter. It doesn’t matter whether you stick with the classic version, add a pop of color and tang with pickled eggs, or load up the eggs with an avocado-spiked filling.
